Solarberry Jam

I know that this post belongs at the beginning of summer, but we just made this and it is so yummy.
So I will share it in honor of summer's lingering exit.

Jackie Boy brought this home as a gift to me at the end of last school year and had been asking to make it . We finally did.
Isn't the little strawberry he made just adorable?
It has a clothespin glued to the back and a magnet glued to the other side.
I put it up on our magnetic board.

I was really happy with how easy the recipe is and how fun it was to include the kids in the process.
Plus, the sun gets to help you make your jam.
How cool is that?

The boyz love to have the responsibility of cutting things in the kitchen.
So Jackie Boy got to cut the lemon picked from our tree

and Mister Luke was in charge of slicing the strawberries.

Basically, you take a pound of strawberries, add some lemon and sugar

SOLARBERRY JAM

INGREDIENTS
1 pound strawberries
1 cup sugar
1 tablespoon lemon juice

1) Wash, stem and slice strawberries.
2) Place strawberries in a saucepan and stir in sugar and lemon juice.
3) Cover and set aside for an hour.
4) After one hour, boil the mixture for five minutes.
5) Place the mixture in a shallow baking dish. Carefully cover with clear plastic wrap.
6) Place the baking dish in the sun for three to four hours.
7)Bring in the jam, spread it on crackers, toast or bread and enjoy.
8) Store the jam in a jar and refrigerate.

I've never made jam before but that's an easy recipe. I never knew it was so easy to make your own. Thanks!

Oh, I'm gonna have to try this! I could use frozen berries right? I know it won't be as good but I don't think I can get fresh anymore.

Unfortunately all our strawberries get eaten whilst we are in the vege patch .... although, come to think of it, it isn't really that unfortunate at all.
