Candy Sushi

When Luke was five, he used to love watching Rachel Ray's cooking show. So, before she had her own show on network TV and her own magazine, we headed over to a local bookstore, stood in the rain and waited to have her kids' cookbook autographed for Luke. She seemed in a hurry when we met her, but Luke was able to get in a quick "Hi" and get his cookbook autographed. She signed her "Cooking Rocks! Rachel Ray 30-minute meals for Kids" with "Luke, Rock On- Rachel Ray." Pretty cool for a five year old.

Four years later, he still whips it out sometimes and asks if we can make something. Yesterday, it was a miraculous rare day of no homework (due to state testing) and no baseball. So, we took advantage, had some fun, and made Candy Sushi. This just happens to include two of Luke's favorite things- sushi and candy.

It was fun and turned out pretty cool so I thought I would share it with you all!  I'll put the recipe at the end, but this is what it looks like in pictures.

Pieces of licorice cut in half.

A small batch of rice crispy treats.
You take fruit roll-ups, (I didn't realize I bought multi-colored. Next time I would get one solid color.) and  place the rice crispy/marshmallow mix and the licorice in the roll-up. Then you roll it up tight, like you would a sleeping bag.
Take a knife, dipped in warm water, and cut the roll into "California roll" size slices.
And voila! Here is the CANDY SUSHI!

The kids all gave it a thumbs up. They even had to call a couple of friends to come over and try it. It was a hit with both me and the kids.

Here is the recipe-1 TBSP Butter
12 marshmallows
2 cups rice crispies
6 fruit roll ups
6 strips licorice, cut in half

Melt butter over low heat and add marshmallows. Remove mixture from heat and add cereal.

Roll out fruit roll-ups. Place a few spoonfuls of the rice crispy mixture in the fruit roll-up, add two pieces of licorice and roll it up. Run a knife under warm water and cut the roll into pieces. Enjoy!
