How To Make A Rainbow Cake

Photobucket

My mom is a cake maker.
And she likes to include the boys in projects.
So, last night was "Let's Make a Rainbow Cake" night.
And it turned out so whimsical and fun that I had to share it with you.

Start with these ingredients.

Photobucket

Pour 24 ounces of Sprite into two boxes of White Cake Mix.
Beat together.
No eggs, oil or water needed.
Just the Sprite.

Take out six medium size bowls and scoop one cup of the cake batter into each bowl.

Photobucket

If any mixture remains, spread evenly between bowls.

Photobucket

Each of the six bowls will contain a different color.

Photobucket

We used food coloring gel instead of drops so the color was very vibrant.

We used blue, red, green, yellow, purple and orange.
Of course, for purple and orange, we had to mix two colors.
You could also use pink.

Photobucket

Once you have your six colors, grease two round cake pans.
I prefer to line the bottoms with parchment paper, but we didn't have any on hand.

Photobucket

Pour one bowl of color into a pan. Then pour a second color and finally the third.
Do not spread out at all.
Leave it just like this.

Photobucket

Take the other three colors and layer in the same way in the other cake pan.

Photobucket

Bake at 350 degrees for 40 minutes.

The frosting is a large tub of Cool Whip mixed with a large box of vanilla pudding.

Photobucket

Frost the cooled cake and enjoy

your kids faces turn into big happy smiles.

I've always wanted to do this. Love the one of them in front of the oven. Too sweet!

that is super cool I'll have to try that, now did you stack both cakes then frost or frost separate & serve together? :-)

OK...So I frosted the cake when she left the room so hence no pictures of that process, sorry. Use instant pudding if you can find it, if not the other works fine.
You can arrange the colors in any order you like in the pan.

Cool cake..... than wrap it all up in this fun to make frosting & frost between layers. It's so Yummy!

This was the perfect recipe and so easy!! I made these last night for my son to take for his St Paddys Day party at school today. There is a kid in his class with an egg and peanut allergy, so this was perfect. I made them all green cupcakes with green frosting, they were a hit indeed!

Thanks again,
Rhonda
